Chief Operating Officer , White Rabbit Projects

Éadaoin McDonagh is Chief Operating Officer of White Rabbit Projects, a specialist hospitality incubator which identifies, creates and incubates early-stage hospitality concepts, helping them to scale successfully ensuring quality and guest experience is at the forefront of the journey. 

Éadaoin is also the managing director of Lina Stores and has scaled it from an 80 year old much loved Soho delicatessen, to nine London stores today. These include small format pasta bars, flagship stores with delicatessens and a new format Bar Lina - an Italian aperitivo bar. Lina Stores expanded into Japan in 2021 and will open their first regional store in Manchester in early 2025.

White Rabbit Projects has also invested in and works alongside the founders of Kricket and Island Poké to develop 13 UK stores and 8 in France. In 2021 Éadaoin helped to establish White Rabbit Hospitality to support landlords and hoteliers to design, develop and operate F&B for hotels in Scotland, Northern Ireland, Oxford, Cambridge, London and most recently Lisbon. 

Éadaoin is a native of Limerick, Ireland. She studied linguistics at UL and teaching at UCC, followed by extensive travels. From Belgium, Australia, New York, Germany and finally London, Éadaoin has worked with some of the world’s best chefs, architects, designers and artists to ignite her passion for hospitality, food, people and design. She has developed and operated restaurants for Harvey Nichols, the Serpentine Galleries, Mustard Catering, Kofler Group and Pino Luongo Restaurants.
